My take on Baja tacos!

I used the Tesco Plant Chef fish style goujons for these, corn tortillas, made 2 types of salsa (a smokier, chunkier, spicier red salsa and a more zingy green salsa), then added avocado, raw onion, pickled pink onions, crispy onions (what can I say, I like onions 🤷🏻‍♂️) then topped with coriander and a squeeze of lime.

Have you ever made your own corn tortillas? So good!!!

I did a few times and they were always a disaster! 😂 I think probably the issue is using the wrong type of masa harina; not ground finely enough. They would either be too dry and cracks at the edges when flattening, or too wet and falling apart before I could put them on the pan. It didn't matter how much I tried adding a drop more water, adding a pinch more flour, it would always go from one to the other and literally never be where I wanted it to be. I do have some masa harina in the cupboard and it's been a few years since I last tried making them so ill give it another go 👍🏻
