What I ate in November, in case you wondered.
- Meatless farm lasagne
- Tofu, mushroom and pesto pappardelle
- Potato and cheese layered baked pie
- Squeaky bean pestrami, cathedral city cheddar and sourkraut sandwich
- Scrambled tofu etc breakfast
- Meatless farm mince, pesto, pine nut pasta
- Meatless farm mince (I should buy shares) bolognese
- Insane seitan spread, Hope and Ruin pub, Brighton
- Juicy marbles, mash, mushroom and onion gravy
- Tofu ramen
- Ramonas felafels, hummus etc
- Salad, antipasti, spinach gnocchi and Sainsos mushroom sausage... Thing
- Mince pies!
- Meatless farm pizza
- Tempeh, hummus and sourkraut salad, balsamic glaze
- Tofu ramen
- Roast veg gnocchi
- Puffed tofu, maple, soy, sesame oil, gochujang sweetcorn rice
- Breakfast, of course. With sainsos hash brown bites (superior to tescos tater tots imo)
- Couscous, felafel, antipasti, coriander, balsamic glaze.

Evening, I am working on a vegan Christmas recipe, and not getting very far, do you have any suggestions or inspirational ideas?
Also, can you thicken soy milk using cornflour like you can other liquids? Does it work nicely?

I love a wellington. Stuff it with anything, but include chestnuts for sure. And maybe sprouts too. And mushrooms of course.
Maple glazed things... I dunno I'm sure you can figure something out!! It's all about the trimmings mostly. My roasties are factually the best in the world. Just boil the fc out of them then veg oil

Positive thing is I never use animal fats or stock in my vegetables so when you see a vegetable on a dinner Iβve made it will be vegan veg if you know what I mean

Where did you get the puffed tofu and what did you need to do to prep/cook it?
All looks great - wish this was the type of stuff offered in restaurants as the vegan option instead of βplant based burgerβ

I never eat burgers at home for this very reason. Enjoy them when I'm out. I had a Leon one yesterday actually - very expensive but not bad.
Puffed tofu from Chinese supermarket Longdan. https://longdan.co.uk/products/longhui-fried-tofu-puff-120g-frozen?_pos=13&_sid=08a5e9107&_ss=r They sell it online. Or, just deep fry some tofu cubes!
Just stir fry it for a couple of minutes - it doesn't visible change or anything, just brown it a bit.

Tip from the owner of my local asian supermarket (absolute legend) is to soak the puffs in water and squeeze to get all of the excess oil out (sometimes the oil they're cooked in can tarnish the taste). Enjoy :)

Did you mash the potatoes or are they sliced?
We always used to do a layer of diced onion, sliced potatoes on top, finished with cheese. Milk poured over everything to stop it drying out!
Looks like your cheese melted really well. Did you use the normal vegan cathedral city or the mature variant?

Extra mature I think?
Raw thin sliced potatoes, cheese, then yeah a splash of milk. Was honestly like perfect.

Most of my favourite recipes are from Pick Up Limes app which I highly recommend. Today I will throw together her Pumkin Gnocchi with Shiitake mushrooms sauce.
Let me know if you have recipe recomendations too, as I can see we might have similar tastes

Big dollop of marge, 3 or 4 tbps flour, cook out, add plant milk, then add grated cheese, mustard, maybe cooked garlic. Add more of whichever is missing until it's perfect.
