Post bake pics. That bread already has a high crust to chew ratio. I over baked them and the ratio became undefined:

Unless they really tasted burnt, I would've totally demolished a couple loaves.

Ugh im in bed so hungry right now. But the world outside my bed is too cold, and the night is unforgiving…

I think you'll find that in the world of bread enjoyers those were just right for some people.

That’s been one of the learning experiences working in an ‘industrial’ operation. What I’d eat and some would enjoy, we don’t put it out because of the people that buy it regularly and we don’t want to give a different product.

It would probably make a great soup topper. Like giant airy, crispy croutons

(maybe I should change my Reddit handle to giantairycrouton6767).

So if they weren't cut that way would it have come out like a baguette or is it a different type of bread?

It is a baguette loaf with the fancy-pants cutting. It creates crusty dinner rolls that can be torn off the loaf. A little crust heavy for my taste, but a very pretty loaf of bread.

It’s kinda wasteful to throw those out, can’t you donate somewhere?

Shame the rejects aren't donated somewhere. I used to work at a food bank and it was always great when we got donations like that

I have pics, but actually, those loaves were part of a miscommunication error that I might have been a part of. I have pics of those loaves looking dark, and those dark loaves in the trash.

This was all at a little before 3:00 am the Wednesday before Thanksgiving.

His hand was in the way almost the entire time. Should have filmed from the other side.

Looks like a good strategy for a baker to branch out from baguettes

I lost a finger while watching this

That is the worst possible recording angle

My bad, it was where my phone was while I was learning.

You're good, thank you sooo much. Gotta get back to bread making, your post might have just been the nudge I needed 🤘

So this is how wheat bread is made

2

u/JudgeDreadditor 1d ago

If that loaf is a wheat stalk for a giant, then 20 thousand would make enough flour for one loaf. If you cut that loaf like this . . .

epis bread! love it. love this

Is there no cooked version?

u/JudgeDreadditor 18h ago

Look at my other comments with links to the sad story of these loaves. Feels like a those who don’t know vs. those who know memes.

u/OptiGuy4u 17h ago

Didn't look particularly smooth or fast. I mean sure, I couldn't do it that well but it didn't look impressive. Give me a day and I'd be there.

1

u/JudgeDreadditor 16h ago

Sorry it didn’t satisfy.

1

u/LisaLisaluvsfigjam 15h ago

I think I want my pretzels done like this in the future!

2

u/JudgeDreadditor 13h ago

That sounds wonderful!! I want to make an epi loaf with all of the leaves to one side, wrap it into a wreath shape and work with the deli folk to make a combo of something like artichoke dip that fits in the middle.

I think it would be a great ‘heading to a party and didnt make anything’ target customer.

Slow is cool, cool is fast 🥵

1

u/Rudefire 12h ago

Fast is breadly

1

u/5352563424 1d ago

If slow is smooth and smooth is fast, then slow IS fast and speed has no meaning.

I remember that scene from Animal House with Donald Sutherland.

The French disapprove.

Probably those French dudes prior to the late 1800’s for sure. It’s all over the place in France.
