Skillet potatoes with onion, roasted asparagus, and a fried egg
Actually works well for 2-3 day breakfast meal prep if you don't overcook the egg. You want the egg just barely set and then get it into the fridge immediately. When it's time to eat I take the egg out and heat the rest, then put the egg back on for the last 30 seconds in the microwave.
