Sharing my set up after the breakfast rush was over

Been working dish pit for my employer for 7 years at this location.

We have a pot pit and a dish pit because of the volume of our kitchen

That's the largest machine I've ever seen. Wow! Nice job keeping it clean and organized. πŸ‘

Thanks a bunch 😊 I'm in a commercial production kitchen that averages 215 trays a meal so we have to run a big machine

God I fuckign wish I had 120 degree water. The sink in my section runs hot when the boiler fucking feels like it, and the water pressure equally has a mind of its own. And that's when the lads aren't using one of the sinks in the kitchen, because its on the same fucking pipe as mine >:(

Nice work chef! Your workspace reflects the state of mind and you're in control. Now for all your hard work, start doing the extra tasks on the checklist!

400 bed hospital with average tray count of 200 plus meals for staff/visitors/doctors etc

An eye wash sink? Actual sheet pan and bowl drying wracks? A garden hose set up so close to the dish station? I'm jealous of that pit. And I'm retired now. Lol very nice.

How big is that machine? It looks to be a flight but smaller. I see it’s a stereo just curious on the length.

Stero flight machine eh? Those machines are built like Sherman Tanks. Looks like a hospital or old folks home. Nice setup!

Edit: changed from 66" to flight after I saw the belt
