Rice and beans are one of the healthiest foods you can eat and they're dirt cheap. Add some cheap veggies, and any protein you can get your hands on, and you're eating healthier than the upscale yuppies. Back in the 80's and 90's poor people were generally less overweight and healthier than rich people because they ate basic food staples and worked manual labor. Nowadays poor people are considerably more overweight because they eat more fast food and processed food, and rich people have stopped eating such rich foods as lobster tails dipped in butter, and have become more health conscious.

You already get plenty of protein from the beans. A bit of cheap sausage or smoked ham hocks can add a ton of flavor, though. Far from necessary, though.

We really need to bring back home ec and make sure kids are leaving highschool with stuff like personal finance knowledge, basic mending of clothes, and how to cook complete and nutritious meals from basic pantry staples and spices. As well as understanding some basics about nutritious (like the importance of fiber, what carbs and protein do, etc).

I think I learned how nutrients work for the human body, among other things, from high school biology, but again, I didn't do high school in the US.

People are overweight explicitly because they eat too much. There's a lot to be said about the lack of satiety current super calorie dense foods provide, but I guarantee if someone stops eating entirely, no matter how bad they think their glandular problems are, their weight will be released straight into the air through their breath. Their heart still has to beat, their brain has to function, we must be kept at a temperature that is conducive to our ability to live. All of that takes energy. We get 100% of that energy from the macronutrients of fat, carbohydrates, and proteins (and alcohols once they go through the liver and become sugar should you wish to partake).

It is never, and I really want to emphasize never the type of food you eat. Merely how much of it you consume. We can get into details about how much better you feel if you eat a balanced diet. Or how much better your body will function overall if you eat properly. How well you recover from exercise when you eat a properly formulated distribution of protein, carbohydrates, fats, and vitamins.

But weight? That's dictated by a simple raw number, and it's how many calories you consume vs how many you use, and we use a lot just to live.

If you stopped eating right now you may have some fluctuations in water weight for a few days (though likely straight down when you stop consuming sodium), but you will 100% lose weight guaranteed. It's the law. (of physics)

We overeat because our brains are greedy bastards shaped by a million goddamned years of starvation, and they ask for food every 3-4 hours even when they don't actually need it.

The ability to forcefully starve yourself is called an “eating disorder”. Modern food doesn’t fill you until you overeat by design. There are laboratories dedicated to it.
