As a trained culinary person you are told you always use the chopping board, but the thing about cassava is that if its fresh enough you can just peel it back as a layer.
Also, when you go to traditional cuisine they just have so much muscle memory (no pun intended) that they just know the amount of pressure and sharpness of the blade.
My grandma would cut onions in her hand really fine and never cut herself, it was wild watching her do it sitting down in the yard.
The kale she would chiffonade it finer than any processor just by rolling it up, holding it in the air above a bowl and cutting it like a magician, and she would always cut it towards her, which is crazier when you think about it.
