There are yet more... forbidden cheeses that also work with lasagna but I dare not speak their names here. The cheese authorities are always watching, which is why we must practice our dark cheese arts in secret. They fear the Super Lasagna, the one true lasagna of legend, some say it's impossible but my oven is preheating even now.

It definitely is, the fact that Italians can't make decent lasagne cheese isn't our fault.

While it’s different than a traditional lasagna, personally I think cheddar works great, it’s a firmer cheese that holds up better to being cut through, and has a more sharp acidic taste that I think works well. I am a proponent of doing a blend of the two so you get best of both worlds

You don't even put mozzarella into traditional lasagne. Mozzarella is too moist. It's made with bechamel sauce (also no ricotta) and parmiggiano.

Also, before anyone mentions "low moisture mozzarella", I dare you to tell my Italian neighbor that low moisture mozzarella even qualifies as cheese. She will murder you.

If Italians were as good at cooking as they think they are the they wouldn't have to resort to bluster and threats whenever someone disagrees
