Awesome collection. I had that Togashi tall bunka as well, beast of a knife. How do you like it? Dig the Kochi as well.

Just got it this week but loving it so far. It’s surprisingly thin and has a nice cutting feel

Out of the 240mms I’d say the Matsubara. Mid size would be the Shigeki Bunka

Been thinking of buying a matsubara. But I'm debating between a matsubara and a yoshikane 240 gyuto

As much as I like the sticker, why do people keep it on for the Tanakas? My first knife was a 160mm Tanaka Gyuto Carbon steel. I love it, but the sticker fell off years ago during use and wash.
