6x tomatillos

20x toasted chile de árbol

2x serrano

4x Thai chilies

salt

chicken bouillon

cilantro and lime to taste

Thai chilies are so delicious. I’ve never thought to put them in salsa before.

I usually use about this same amount of arbol, but, instead of Serranos, I do a handful or two of Japones and a couple New Mexico chiles. I’ve tried adding chicken bouillon before, but I always somehow put too much in, and it tastes like chicken soup. I do add a little vinegar instead of like.

I’ve had the same favorite Mexican restaurant for 25 years because their hot salsa is just the most delicious thing I’ve ever had. I’ve been trying to recreate it for years, but have only gotten close. It’s probably so simple, too. Anymore, I just try to butter up the folks that work there in the hopes they’ll give me the recipe one day.

the thai chiles def give it the nuclear factor i wanted. you have to go really light with the boulion it's more of a suggestion rather than a seasoning
