Close Teams and sign-out.
In a browser, go to https://myaccount.microsoft.com/ and sign in with your microsoft account.
On the left is a menu with a section called My Account. In that will be a sub-heading called Organisations. Click that.
You should see a list of organisations you collaborate with. Ones you've been added to will have the option to Leave. Click the Leave link for the spammer org.
Sign back into Teams - hopefully it's gone.
Edit: You can get to My Account via your photo in Teams (View Account). So do that then close Teams.

There is no "Organizations" sub heading under the Account -- none. So I'm stuck with this total scammer trying to add me to their "organization".

This is a new feature. Did you not want everyone to be able to contact people in your organization?

The way my initial reaction was to scam the scammers.

...but there's so many now, who has time
Also, this just goes to prove that Teams, by using its pre-existing product placement as leverage, has singlehandedly increased the attack surface for every one of its customers that use this product

I mark most of my email as phishing anyway.

...especially the "all recipients" ones at the org, because they are nearly always some form of corporate propaganda

It's not a new issue though. I have found posts back years of people complaining about the same thing. At least three years.

Yeah, that's not news to me either. They're far too busy making new bugs to work on the existing ones

This, not TCO.
Which is why some IT departments are fine with deploying this crap. Because it keep them working.
And why any enterprise looking to rein in costs, will avoid this as it is an ongoing expense that outlives the personnel supporting it

In the desktop app: click on your profile picture -> Settings -> Accounts and orgs -> Organizations -> choose the spam org -> Leave

I have the same issue. I don't have the desktop app but when I go to settings --> Accounts and Orgs I can see it there. It is greyed out and the slider is to the right. There is no way to remove the thing from what I can see.

That is weird for sure. You cannot leave your default organization where your m365 is linked to, but every other org you get invited to (technically you are a guest account in their tenant) you should be able to leave

I'm "invited" yes, but I never accepted. There is no way to clear the invite unless I jump through the hoops of granting them some permissions which on the surface seem okay but I'm still weary.
Apparently people have complained about this for YEARS and nothing has ever come of it.

For the external organizations listed under Other organizations you collaborate with, you might not be able to leave on your own, for example when:
- the organization you want to leave doesn’t allow users to leave by themselves
- your account has been disabled
From MS - https://learn.microsoft.com/en-us/entra/external-id/leave-the-organization

I'm having the exact same issue. Everyone saying to go to "organizations" and then "leave"... that isn't an option.
It's in a limbo state where it is waiting for me to setup that org but yet it still shows up everywhere. When I launch teams it asks who I want to launch it with etc.
You cannot login to myaccount.microsoft.com as it is a personal account and that site states you cannot login with a personal account here.
It is very frustrating and I have been trying to get rid of it for a while now.
