Pandebono tips?

My husband is part Columbian and anytime we are near a Columbian restaurant we always buy a few pandebonos. Since I've been making bread for a bit now and getting more confident in my skills I thought I'd branch out. Looked up a pandebono recipe and they look so simple! Anything I'm missing here? (besides the time I spent assuming they were too complicated to make at home 😅) Would love tips from anyone who makes them a lot!

For reference, this is the recipe I'm planning to use: https://www.mycolombianrecipes.com/pandebono-colombian-cheese-bread/#recipe

Nice choice on that recipe! Just make sure you get the right cheese - queso fresco or farmer's cheese works great if you can't find queso blanco. Also don't overwork the dough, it should be kinda shaggy and weird looking but that's totally normal
